This is a quick and easy recipe for a delicious warm fruit dessert, perfect for a both cold winter day and an outdoor picnic in summer. It is a great way to eat berries, especially in winter when the fresh berries that are available are not all that tasty. Frozen berries were picked at their peak making them a better flavour option during the winter.
1 Granny Smith Apple, peeled, cored and sliced
3/4 cup mixed berries*
1/4 cup sucanat or organic sugar
1 tbsp whole spelt four or brown rice flour (or whole bean)
1/2 tsp cinnamon
1/2 cup rolled oats
1/2 cup whole spelt flour or brown rice (or whole bean)
2 tbsp butter, cold and cut into cubes (plus butter for greasing the baking dish)
2 tbsp sucanat or organic sugar
Few drops water
Preheat the oven to 350 degrees F. Grease a small baking dish with a bit of butter. Place all the filling ingredients in a bowl and mix. Put the filling into the baking dish. Place the flour, butter and sugar in a food processor and process to a fine crumb. Transfer to a bowl. Wet your hand and use the wetness to mix the topping so it binds together a little. Sprinkle the topping on top if the filling and press it down so that it sticks together. Bake for 30-35 minutes. Remove from the oven. Let cool for 20 minutes and serve warm with your favourite ice cream or drizzle some fresh cream on each piece. Serves 2.
*Look for a package of mixed frozen berries as a cost effective way to get a variety of flavours.
