Chocolate Almond Treats

choclate almond 6This is a simple, easy treat that is ready in 10 minutes (after the dates have been soaked). These treats are small but rich and contain a host of nutrients. The dates and the coconut contain fiber, essential for gut health and healthy elimination. The coconut also contains medium-chain triglycerides, which help boost energy and metabolism.  Almonds are high in the minerals magnesium, calcium and potassium and contain prebiotic fiber that helps promote healthy good bacteria levels in the gut. Butter is a source of vitamins A and D and many beneficial fatty acids including butyric acid, a short chain fatty acid that supports gut health.

4 dried dates

½ cup natural almonds

2 tbsp semi-sweet chocolate chips

2 tsp butter

2 tbsp unsweetened, sulfite-free shredded coconut plus 2 tbsp for rolling

Soak dates in hot water for 30 minutes to rehydrate them. Melt the chocolate and butter in a double boiler and melt over low heat. Place the almonds, coconut, chocolate, butter and dates in the food process and process until the almonds are a fine crumb and the dates are all mixed in. Roll the mixture into 6 balls, approximately 1 inch in diameter. Roll each ball into the reserved coconut. Place on a tray and chill until the chocolate and butter set. Serve or store in an airtight container in the refrigerator.

    These have become my absolute favourite go to snack. I make them all the time. Instead of rolling them in the coconut, I add the coconut to the mix. Just made me a new batch. Thanks for such a great treat.
