3/4 cup brown rice
1/2 cup whole bean (garbonzo or fava bean flour also works)
1/4 cup grape flour or other high-antioxidant fruit powder such as goji, acai, mangosteen, maqui, blueberry (or it could be a mixed fruit powder)*
1/2 cup sucanat
2/3 cup maple syrup
1/2 tsp vanilla
1 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
2 eggs**(see below for vegan option)
1/2 cup room temperature coconut oil
1/2 tbsp coconut butter***
1/2 cup coconut milk mixed with 1/2 cup water
1/4 cup unsweetened, unsulfited, shredded coconut.
1/3 cup dried cranberries ( fruit juice sweetened or dried fruit of choice)
Mix coconut oil, coconut cream, eggs, sucanat, maple syrup, eggs and vanilla together in a mixer bowl until smooth
Mix baking powder, baking soda, sea salt and the flours. Add the flour mixture to the wet mixture; mix thoroughly and add half the coconut milk. Mix until smooth. Add the rest of the coconut milk and the shredded coconut and dried fruit. Grease a 12–cavity muffin tin and scoop batter evenly into each cavity. Bake at 325 degrees F for 20-25 minutes. Remove from oven and let cool for five minutes. Remove from the tin and let cool on a wire rack.
*There are many of these powders on the market. The only ingredients they should contain is the fruit itself. They should nothing more that dried or freeze-dried fruits with the water extract so the product can be ground into a powder. There should be nothing else added. Two of my favourites are the Bioflavia powder from or “grape flour” from Southbrook Vineyards may from grape skins that are left after the grapes have been fermented and pressed for wine. The skins are then dried and turned into a powder. This is the best rest reseveratrol content going and the highest reserveratrol content is in the skins.
Another favourite are any of the superfood powders from Organic Traditions. Two of my favourites are maqui berry and purple corn flour. Look for them in your local health food store or order them from Your Organic Sources
***Coconut oil is quite bland. Coconut butter is a mixture of coconut oil and coconut meat that goes by different name such as Coconut Butter from Artisana or Coconut Manna from Nutiva. Adding some of this gives anything the coconut flavour people expect from coconut
